Peach-Blackberry Crumble

This recipe uses peaches and blackberries but the same steps can be used with any fruit

Equipment

  • 1 8x8 baking dish

Ingredients
  

  • 4-6 cups peaches
  • 1 1-2 cup blackberries
  • 2 tbsp lemon juice
  • 1 tbps lemon zest
  • 2 tbps cornstarch
  • 1/2 cup brown sugar
  • 1 cup flour
  • 3/4 cup rolled oats quick or rolled
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1 stick melted butter 1/2 cup
  • 3/4 cup walnuts or pecans optional

Instructions
 

  • butter 8x8 baking dish
  • in bowl mix fruit, lemon juice & zest with corn starch
  • place in buttered baking dish
  • in seperate bowl mix remaining ingredients. When well mixed sprinkle evenly over fruit.
  • Bake 45-50 minutes
  • Allow to cool for 10 minutes and serve with ice cream or whipped cream.
    Refrigerate uneaten portion. Can be reheated till warm in oven or microwave.

Notes

This is a simple dessert for any time of year ,but in the summer we seem to have a bounty of fresh fruit. This would be a great recipe for any stone fruit and/orĀ  berry combination.
