There are some people that cant get enough chocolate! So it was no surprise to me that my 16 year old wanted a chocolate chocolate cake for his birthday. What makes this simply delicious chocolate cake so amazing is the addition of mayonnaise I know that adding mayonnaise to a cake recipe may seem a bit strange, but it adds a moist richness that sometimes can be missing in a cake. I have tried many chocolate cake recipes but this is by far my go to. Every cake lover can agree that the best chocolate cake is a moist chocolate cake. This is the kind of cake that you can press you fork down into and the cake just sticks to it. The richness and flavor of this can is always consistent. The only other thing this cake could possibly need is a cold glass of milk.
This recipe will not disappoint. Simple and easy with only 8 ingredients. Modification for vegan friendly recipe with the same delicious flavor.
Chocolate Mayonnaise Cake
Equipment
- Mixer
- offset spatula
- Cake stand or plate
Ingredients
- 6 Tbsp Unsweetened Cocoa
- 3 cups All Purpose flour
- 1 Tbsp baking soda
- ¼ tbsp salt
- 1 ½ cups sugar
- 1 ½ cups mayonnaise or Veganaise
- 1 ½ tsp pure vanilla extract
- 1 ½ cups cold water
Chocolate Frosting
- 1 cup butter, softened or Vegan Butter
- 1 cup cocoa
- 1 tbsp vanilla extract
- 5 cups confectioner's sugar
- 6 Tbsp milk or Nut Milk
Instructions
- Mayonnaise Cake:1. Preheat oven to 350°F, grease and flour two 8″ cake pans.
- 2. Sift cocoa, flour, baking soda, salt and sugar into a medium bowl, mix well.
- 3. Combine mayonnaise, vanilla and water in an electric mixer at low speed. Once smooth, slowly add in dry mixture until just incorporated (do not over beat).
- 4. Pour batter into cake pans and bake for 30 minutes or until done.
- 5. Cool on wire racks and frost with chocolate frosting or your favorite frosting.
Frosting
- 1. For chocolate frosting, in the bowl of an electric mixer, beat butter and cocoa with whisk attachment until smooth. Add vanilla. Add confectioner’s sugar alternately with milk until icing reaches a spreadable consistency.
