Peach-Blackberry Crumble

This is a quick and easy recipe for any of your summer fruits. I get so excited to see all the fresh fruits at the farmers market and sometimes I just cant use all the fruit in a timely manner, so this is a great way to make good use. Any fruit or combination will work. I love the additional crunch of chopped nuts if you have them, but optional. Of course serving this crumble warm with ice cream of whipped cream is the ultimate, but it’s delicious straight from the fridge as well. Enjoy!

Peach-Blackberry Crumble

This recipe uses peaches and blackberries but the same steps can be used with any fruit

Cook Time 45 minutes

Equipment

  • 1 8×8 baking dish

Ingredients
  

  • 4-6 cups peaches
  • 1 1-2 cup blackberries
  • 2 tbsp lemon juice
  • 1 tbps lemon zest
  • 2 tbps cornstarch
  • 1/2 cup brown sugar
  • 1 cup flour
  • 3/4 cup rolled oats quick or rolled
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1 stick melted butter 1/2 cup
  • 3/4 cup walnuts or pecans optional

Instructions
 

  • butter 8×8 baking dish
  • in bowl mix fruit, lemon juice & zest with corn starch
  • place in buttered baking dish
  • in seperate bowl mix remaining ingredients. When well mixed sprinkle evenly over fruit.
  • Bake 45-50 minutes
  • Allow to cool for 10 minutes and serve with ice cream or whipped cream.
    Refrigerate uneaten portion. Can be reheated till warm in oven or microwave.

Notes

This is a simple dessert for any time of year ,but in the summer we seem to have a bounty of fresh fruit. This would be a great recipe for any stone fruit and/or  berry combination.
