- 1 bag romaine hearts rough chop
- 3 each vine tomato large wedges
- 1 pound feta cheese sliced into wedges
- ½ cup pitted greek olives
- ⅓ cup capers rinsed and dried
- ½ whole english cucumber sliced thick or wedges
- 4 each hard boiled eggs
- ½ cup pepperoncini peppers rinsed and dried
DRESSING INGREDIENTS
- ½ CUP OLIVE OIL EXTRA VIRGIN
- ⅓ CUP VINEGAR RED WINE
- 1 EACH LEMON JUICED
- 2 EACH ABCHOVIES CHOPPED
- 1 TSP MUSTARD DIJON
- 1 TBSP DRIED OREGANO
- ½ TSP SALT SEA SALT
- 1 TBSP BLACK PEPPER FRESH GRIND
STEP THREE
Shake the salad dressing again, and drizzle lightly over each salad. Reserve the rest so each person can add more if they wish.
NOTES
Serve with your favorite crusty bread, If you wish a protein to make this a meal, fresh seared tuna or salmon are excellent choices. You may also use fresh cooked shrimp or cooked chicken breast.
